Grill Baked Barbequed Pork:

Here is a great recipe for barbeque. This one requires some patience and time with the charcoal fire. However, it's nice to sit on the deck with a glass of Chianti while tending a warm fire; especially in the fall, when everything is beautiful. For serving size, one loin is enough for a teenage boy or two normal adults.
What you need. What you do.
1 cup white wine, 1/2 tsp each of basel, thyme, rosemary, and sage. Mix herbs with wine.
1 pork tenderloin. About 1 lb. Place tenderloin in a bowl and pour wine, herb mixture over the meat. Cover with plastic wrap and refrigerate at least 8 hours. Turn the meat once or twice.
Charcoal and grill. Build a fire in the grill using charcoal. Your goal is to have a 1 layer bed of briquets with a light coating of grey ash over them.
Place the cooking grill above the coals and let it warm up. When the grill is hot place the meat, fat side up. on the grill. Cover the grill and bake for 20 minutes.
Turn the meat and bake covered for 10 minutes more.
Barbecue sauce. Use a pastry brush to paint the meat lightly with sauce. Lightly is the key here. If you like lots of sauce, do your guest a favor and drink it straight from the bottle. Let the others enjoy the flavor of the pork.
Bake for 5 more minutes to fix the sauce.
You can serve this loin with baked potatoes. Another good way is to serve it with linguine and red sauce. The recipe for red sauce is in the archive.
