Your picnic guests will love you for this one. |
|
What you need. |
What you do. |
|
1 quart of lager beer. I tsp. each of basil, parsley, sage, rosemary,
and thyme. |
In a pot big enough to hold the chicken, mix herbs with beer.
Allow to stand 15 minutes. |
|
Chicken parts for 4 people. |
Place chicken in pot. Cover tightly and refrigerate 12 to 24
hours. Turn occasionally. |
|
Grill and charcoal. |
Build a fire of charcoal briquets. The goal is to have a layer
of hot charcoal with a coating of grey ash. |
|
1 cups bread crumbs. 2 crushed ginger snaps. 1tsp. each of basil,
parsley, sage. rosemary, and thyme, 1 tsp. salt. 1/2 tsp. ground
black pepper. |
On a platter mix crumbs and ginger snaps with herbs, salt an
pepper. |
|
Remove chicken and drain. Roll the chicken in the crumb mix until
coated. Place chicken on the grill. Cover and let bake for 1/2
hour. Turn occasionally. |
|
Note: Increase or decrease the marinade and the crumb mix for
more or fewer people. The crusting of this chicken will turn
dark, but it will not burn if you wait for the charcoal to be
coated with grey ash. |
