Seafood Bisque:

Here is a delicious recipe for a very rich bisque. This one requires close attention to temperature as you prepare it.
What you need. What you do.
Chop 1/2 cup onion and 1/2 cup smoked ham. 2 tbsp. corn oil. In a 3 quart saucepan, saute the ham and onion in the oil on medium heat until the onion is tender.
Cut 1 cup peeled and deveined, fresh or frozen, shrimp into 1/2 inch pieces. Cut 1/2 lb fresh bay scallops into 1/2 inch pieces. Add the shrimp and the scallops. Continue to cook on medium heat for 10 minutes.
2 cups heavy cream. Add the cream slowly and heat until the cream is hot, but do not boil.
2 cups shredded sharp cheddar cheese. Slowly add the cheese in small amounts, stirring to blend.
Remove from heat and allow to ripen for about 2 hours.
Reheat bisque when ready to serve. Serve with salt, white pepper, and oyster crackers.
