Black Bean Soup:

New Year's eve is a very lazy day at our home. It's kind of a day for remembering our blessings, remembering our mistakes, and thinking about how we would like the next year to be. So, instead of spending time on preparing food I make my own variation of Black Bean Soup. I start by soaking the beans overnight and put the soup together so it's ready by early afternoon. Then it is there whenever we want to eat. It goes great with crusty bread. It has become something of a New Year's tradition. Here is the recipe.
What you need. What you do.
One Lb. black turtle beans. Sort and wash the beans. Cover with cold water and soak overnight.
6 cups cold water. Drain and rinse the beans and place in a 6 or 8 qt. pot. Add water and start on low heat.
1/2 Lb. of cured ham, diced. One bay leaf, crushed. One tsp. each of fines herbes and paprika. One tbsp. ground parsley. 2 tsp. salt. 1 tsp. ground black pepper2 cups beef stock. Add ham, beef stock, bay leaf, salt, pepper, parsley, fines herbes, and paprika.
1/3 Lb. of sliced bacon, cubed. Fry bacon in a suitable skillet about 5 min. (until starting to brown.)
Chop 2 cups onions, 1/2 cup celery, and 1 cup green pepper. One clove garlic, minced. Add onions, celery, green pepper, and garlic to skillet. Continue to fry and stir until onions are transparent.
Add contents of skillet to soup pot, cover and bring to boil. Simmer for 4 hours, stirring frequently.
One cup good, dry red wine. 15 minutes before serving, add wine.
Serve this soup with crusty bread. It's a meal.
