Burritos or Botanas:

This is a recipe for a delicious south of the border taste. It looks more complicated than it is.
What you need. What you do.
Beans:
1 cup pinto or kidney beans. 1 & 1/2 cups water 1 & 1/2 tsp salt 2 tbsp butter. 1 tbsp cumin.
In a sauce pan, cook the beans with the water and salt on medium heat until tender. Add the butter and cumin and mash the beans with the water. Keep hot.
Meat:
1/2 lb ground round. 1tbsp corn oil. 1 & 1/2 tsp salt. 1/2 tsp ground black pepper. 1 tbsp cumin. 1 cup minced onion.
In a sauce pan, brown the meat in the oil. add the salt, pepper, cumin and onions. Simmer for about 1 hour. keep hot.
Hot Sauce:
1 cup canned tomatoes. 1small onion cut up. 1/2 salt. 2 jalapeno peppers. 1/4 green bell pepper.
In a food processor or blender, puree all the ingredients. Keep chilled until ready to use. This sauce will keep about 1week in the refrigerator. After that it should be discarded.
Guacamole:
2 ripe avocados. 1 Roma tomato. 1 small onion. 1 tbsp lemon juice. 1/2 tsp salt.
Peel and pit the avocados. In a food processor or blender. puree all the ingredients. Keep chilled until ready to use.
Mozzarella cheese. Soft flour tortillas. Sour cream. Heat 1 pint of Willie chili (recipe in archive). Chopped olives, onions, tomato green pepper, and lettuce.Canned hot yellow wax peppers. Canned jalapeno peppers. For burritos, place beans, meat, and cheese on a tortilla. Wrap and top with more cheese. Microwave for 2 min. Top with chili and/or guacamole and/or sour cream. Serve with hot sauce and other ingredients on the side.
Corn chips. All above ingredients. For Botanas, place a layer of corn chips on a plate. Cover with meat and/or beans and/or cheese. Microwave for 2 min. Top with selected ingredients.
