Nancy's Cheese Soup:

Here is a nice soup to serve with that special, once a year ignore
fat, dinner. |

What you need. |
What you do. |

1/2 cup chopped Canadian bacon. 1/2 cup minced onion. 1 tbsp.
butter or margarine. |
In a 3 qt. sauce pan on medium heat, cook the onion and bacon
in the butter until onion is tender. |

1 cup chicken stock. 1 cup diced potatoes. 1/2 tsp. salt. |
Add stock, potatoes and salt. Simmer until potatoes are tender
(about 1/2 hr.). |

1 cup heavy cream. |
Add cream and simmer until cream is hot. |
|
2 cups shredded sharp cheddar cheese. |
Slowly stir in cheese to melt. Turn off heat and allow to mellow
about 1 hour. Reheat to serve. |
