Chicken Soup:

This is a simple recipe for chicken soup to warm you up on a
chilly day. |

What you need. |
What you do. |

4 qts. cold water. 2 lb. or more chicken legs and thighs. 3 tsp
salt. |
Place water, chicken, salt, and pepper in a suitable pot. Bring
to boil and slow boil for 2 hours. |

3 cups chopped onion. 1 & 1/2 cups chopped celery. 1 cup
sliced carrot. 1 tsp each of sage, rosemary, and thyme. 1 tbsp,
parsley. |
Remove chicken to a dish and allow to cool. Add onion, celery,
carrot, and herbs. continue to slow boil for 1 hour. |

Separate the skin, gristle, and bone from the chicken. Return
meat to pot. Discard the skin, bone, and gristle. Simmer for
1/2 hour or more. |

3 cups of fine egg noodles. |
About 10 minutes before serving add the egg noodles and simmer
until noodles are tender. |
