Boiled Corned Beef Dinner:

This traditional Irish meal is a great change of pace.
What you need. What you do.
2 & 1/2 to 3 pound pre-seasoned corned beef brisket. 2 cups water. In a covered pot on the stove top, bring the water to a boil. Put Brisket in water and cover. Simmer on low heat until fork tender, about 3 to 3 & 1/2 hours.
6 whole small cooking onions. Add onions and continue to simmer covered for 15 minutes.
6 potatoes pealed and cut into serving size pieces. Add potatoes and continue to simmer covered for 15 minutes.
1 cabbage cut into wedges. 6 carrots pealed and cut into serving size pieces. Salt and ground black pepper. Add cabbage and carrots. Salt and pepper to taste and continue to simmer covered for 10 to 15 minutes until carrots are tender.
Chopped fresh parsley. Remove food to warm platter, sprinkle with parsley and serve immediately.
Guinness Stout is a good adjunct to this meal.
