Grill Baked Cornish Hens:

Here is a great recipe for those cute little 1 serving birds. For just a few people, these can substitute for the traditional holiday turkey. Allow 1 bird per guest.
What you need. What you do.
1/2 cup orange juice concentrate. Do not add water. 1/2 cup dry Sherry. 1/4 tsp. each, thyme, rosemary, and sage. 1/2 tsp. minced garlic. Mix all ingredients and allow to stand for about 1 hour.
2 oven ready Cornish Hens. Salt and pepper. Rub hens, inside and out with salt and pepper. Allow to stand while preparing fire.
Charcoal and grill. Build a fire in the grill using charcoal. Your goal is to have a 1 layer bed of briquets with a light coating of grey ash over them.
Place the cooking grill above the coals and let it warm up. Baste the hens, inside and out, with orange sauce.
When the grill is hot, place the hens, breast side up, on the grill. Cover the grill and bake for about 1 hour. Baste, inside and out every 10 minutes.These hens may be served with oven baked holiday dressing and baked or mashed potatoes.
