Grill Baked Cornish Hens:

Here is a great recipe for those cute little 1 serving birds.
For just a few people, these can substitute for the traditional
holiday turkey. Allow 1 bird per guest. |

What you need. |

1/2 cup orange juice concentrate. Do not add water. 1/2 cup dry
Sherry. 1/4 tsp. each, thyme, rosemary, and sage. 1/2 tsp. minced
garlic. |
Mix all ingredients and allow to stand for about 1 hour. |

2 oven ready Cornish Hens. Salt and pepper. |
Rub hens, inside and out with salt and pepper. Allow to stand
while preparing fire. |

Charcoal and grill. |
Build a fire in the grill using charcoal. Your goal is to have
a 1 layer bed of briquets with a light coating of grey ash over
them. |

Place the cooking grill above the coals and let it warm up. Baste
the hens, inside and out, with orange sauce. |
|
When the grill is hot, place the hens, breast side up, on the
grill. Cover the grill and bake for about 1 hour. Baste, inside
and out every 10 minutes.These hens may be served with oven baked
holiday dressing and baked or mashed potatoes. |
