Fiesta Beans with Rice:

Here is a tasty low fat meal. |

What you need. |
What you do. |

1 cup dry pinto beans. 1 tsp. salt. 3 cups water. |
Put the beans, salt, and water in a suitable sauce pan. Cook
covered on low heat until beans are tender, not mushy. Add water
only if needed. |

1/2 cup brown rice 1/2 tsp salt. 1 cup water. |
In a suitable pot, put salt in water and bring to boil. Dump
in the rice and stir with a fork. Reduce heat, cover, and allow
to cook for 1 hour. Until water is absorbed. |

1 Cup chopped onion. 1 cup chopped celery. 2 tbsp corn oil. |
In a skillet, saute the onions and celery in the oil until tender. |

2 cups canned tomatoes. 2 tbsp. cumin. 1 tbsp. chili powder.
1 tsp. salt. 1/2 tsp. ground black pepper. 1 tbsp. parsley. 1
tsp. basil. |
Add tomatoes and all herbs and spices. Simmer until hot. Stir
to mix. Add beans and rice. Stir to mix. Cover and simmer until
hot. Serve immediately. |

Here is a hint for a quick meal. Use canned beans and cook the
rice while you are having breakfast or lunch. |
