Baked Filets of Beef:

On those days when it is too cold to fire up the grill outside,
try this recipe inside. |

What you need. |
What you do. |
|
1/4 cup extra virgin olive oil. 1/4 cup dry red wine. 1/4 tsp.
each of oregano, thyme, basel, rosemary, fresh ground black pepper,
and crushed garlic |
Mix all ingredients and allow to stand for 1/2 hour. |

4 filets of beef of about 8 oz. each. |
Place fillets in a shallow bowl and pour marinade over them.
Cover with plastic wrap and refrigerate for 4 or more hours.
Turn several times. |

Preheat oven to 400 deg. |

Salt. |
Place 1 or more tbsp. of marinade in a hot frying pan. Quickly
sear filets on both sides. Salt lightly. Cover frying pan and
move to oven. |
|
Bake filets for 8 minutes. |
|
Serve these filets with re-baked potatoes, a choice of vegetables
and a bottle of good, dry, red wine. |
