Chili Hot Beans:

For you folks with a cholesterol problem, here is a excellent
chili recipe with only 6 grams of fat in the whole batch. That's
less than one gram per serving. You get all the flavor of chili
and a clear conscience. |

1 cup dry kidney beans. |
Wash beans and soak overnight. |
|
3 cups water. 1 tsp. salt. |
Place beans, water, and salt in a covered sauce pan and simmer
on low heat until beans are tender. Add water to keep beans just
covered. |

4 cups chopped cooking onion. 2 cups beef stock. |
While beans are cooking, Cook onions in stock on med. heat in
a 4 quart sauce pan until tender. |

I Qt. canned tomatoes. 1 tsp. salt. 2 tsp ground black pepper.
t tsp. minced garlic. 2 tbsp. ground cumin. 1 tbsp. hot chili
powder. 1` tbsp. basil. |
Add tomatoes, salt, pepper, garlic, and herbs to stock pot. Simmer
for 1 hour or more. |

Add cooked beans to pot and continue to simmer for 1 more hour. |
|
1 cup good dry red wine. |
Add wine and simmer for 1/2 hour. |
|
Serve straight or with cooked brown rice. |
