Light Meat Sauce:

For folks who are concerned with fat intake, here is a great
meat sauce. It's chunky. It has all of the flavor you could hope
for with less than 50 grams of fat in the whole batch. Our medical
friends recommend that we limit our fat intake to 20 to 30 percent
of our total calories. For the record, 1 gram of fat has 9 calories. |

What you need. |

1/2 lb. of ground round. 2 tbsp. olive oil. 2 cups chopped cooking
onion. 1 clove garlic minced. 2 tsp. salt. 1/2 tsp. ground black
pepper. |
In 4 qt. sauce pan, brown meat in oil. Add onions, garlic, salt
and pepper. Simmer 1/2 hr. |

1 cup beef stock. 12 oz. can tomato paste. 15 oz. can tomato
sauce. 1/4 tsp. cinnamon. 1/4 tsp. nutmeg. 1/4 tsp. basil. 2
tsp. oregano. |
Add stock, tomato paste, tomato sauce, cinnamon, nutmeg, basil
and oregano. simmer at least 3 hrs. |

2 cup chopped green pepper. 2 cup chopped fresh mushrooms. 1/2
tsp. Louisiana hot sauce. |
Add peppers, mushrooms and hot sauce. Simmer 1 hour or longer. |
|
1 cup Chianti. |
Add Chianti and simmer 1more hour. |

This is a large batch, but it freezes well for those quick meals
when you are short on time. |
