Macaroni and Cheese:

Here is a simple quick recipe for a busy day. |

What you need. |

1 qt. water. 3 tsp. salt. 2 & 1/2 cups elbows. |
Place water and salt in 3 qt. sauce pan and bring to a boil.
Add macaroni and cook until almost done (about 10 minutes). Drain
in a kitchen strainer and save. |

1& 1/2 cups milk. 2 tbsp. butter. 2 eggs. 3 tbsp. flour. |
In the same pan, scald milk and add butter to melt. Add macaroni
and stir until hot. Add eggs and stir. Add flour and stir. Remove
from heat. |

Grate 1/2 lb. sharp cheddar cheese and 1/2 lb. mozzarella cheese. |
Layer macaroni in 4 or 5 qt. casserole with cheese. Bake at 400
deg for 20 minutes. Broil for 5 minutes to brown. |
|
Serve hot with hot rolls and butter. |
