Macaroni with Ham and Mushrooms:

This is the old standard Macaroni and Cheese recipe with some
added ingredients. It is not, in any way, low fat. |

What you need. |

2 qts. water. 2 tsp. salt. 1/4 tsp. corn oil. 2 1/2 cups of elbow
macaroni. |
In a 3 quart sauce pan, bring water to boil with salt. Add oil
and elbows. Cook until tender. Drain and save elbows. |

2 cups whole milk. 2 tbsp butter. |
In the same pan, add the milk and the butter to scald. do not
boil. |

2 eggs. 2 tbsp. flour. 1 & 1/2 cups cooked diced ham. 1 cup
chopped mushrooms. |
Stir in the elbows and add the eggs, raw. Stir in the flour.
Add the ham and the mushrooms.Stir and heat. |

1/2 lb. grated sharp cheddar cheese. 1/2 lb. mozzarella cheese. |
Remove from heat and layer in 4 or 5 quart casserole with the
cheese. Top with cheddar. Bake at 400 deg, uncovered for 20 minutes.
Broil for 5 minutes to brown top. |

Serve hot. With a garden salad, it's a meal. |

Here is a dandy basil cucumber recipe for a summer
salad.
In a 2 quart bowl, wash and thin slice 1 cucumber. Do not
peel.
Thin slice one small to medium red onion.
Add 1 tsp salt, 1 tbsp granulated sugar, 1 tsp basil.
Add 2 tbsp extra virgin olive oil, 2 tbsp white vinegar, 1 tbsp
cold water.
Toss all.
Cover and refrigerate at least 1 hour.
Place individual servings on a bed of chilled lettuce.
Serves 4 to 6. |
