Basic Meat Sauce:

Here is an easy Italian style sauce which is great
in many pasta dishes like lasagna, spaghetti, and baked spaghetti. |

What you need. |

2 lbs. of ground round. 3 tbsp. olive oil. 1 cup minced cooking
onion. 1 clove garlic. 2 tsp. salt. 1/2 tsp. ground black pepper. |
In 3 qt. sauce pan, brown meat in oil. Add onions, garlic, salt
and pepper. Simmer 1/2 hr. |

12 oz. can tomato paste. 15 oz. can tomato sauce. 1/4 tsp. cinnamon.
1/4 tsp. nutmeg. 1/4 tsp. basil. 2 tsp. oregano. |
Add tomato paste, tomato sauce, cinnamon, nutmeg, basil and oregano.
simmer at least 3 hrs. Skim off any excess fat. Add water as
needed. |

1 cup Chianti. |
Add Chianti and simmer 1more hour. |

This is a large batch, but it freezes well for those quick meals
when you are short on time. |
Baked Spaghetti is a very good, simple dish.
Just use the Basic Meat Sauce above. Turn on your oven broiler.
Put regular spaghetti in boiling salt water until al dente (about
12 minutes). Use 2 to 3 ounces per person. Drain the spaghetti
and place individual servings in oven proof boats. Top each with
meat sauce and add shredded mozzarella cheese. Parmesan is optional.
Broil the boats until the cheese begins to brown. Serve immediately.
To protect your table, use straw mats under the boats. With a
salad and a bottle of good Chianti, this is a meal. |
