Medallions of Beef:

Here is a quick recipe for delicious beef tenderloin. If you don't have a wok, use a skillet with a cover.
What you need. What you do.
Place serving platter in oven and heat to 200 degrees.
1lb. beef tenderloin from the small end cut cross grain in 3/8 inch thick medallions. 1 inch peanut oil in wok. Heat oil in wok to 400 degrees. Slide in medallions 2 or three at a time for about 25 seconds to sear and turn over for 15 seconds. Remove to hot platter in oven and repeat until all meat is done.
Pour off oil and wipe out wok.
2 cups beef stock. 2 cups sliced fresh mushrooms. 1 cup green onions (white and green) cut to 3/4 inch length. On high heat add stock to wok and bring to boil. Add mushrooms and onions. Cover and simmer for 5 minutes.
Granulated flour. Thicken mixture with flour. Pour over medallions and serve with cooked rice.
