Medallions of Beef:

Here is a quick recipe for delicious beef tenderloin. If you
don't have a wok, use a skillet with a cover. |

What you need. |
What you do. |

Place serving platter in oven and heat to 200 degrees. |
|
1lb. beef tenderloin from the small end cut cross grain in 3/8
inch thick medallions. 1 inch peanut oil in wok. |
Heat oil in wok to 400 degrees. Slide in medallions 2 or three
at a time for about 25 seconds to sear and turn over for 15 seconds.
Remove to hot platter in oven and repeat until all meat is done. |

Pour off oil and wipe out wok. |

2 cups beef stock. 2 cups sliced fresh mushrooms. 1 cup green
onions (white and green) cut to 3/4 inch length. |
On high heat add stock to wok and bring to boil. Add mushrooms
and onions. Cover and simmer for 5 minutes. |

Granulated flour. |
Thicken mixture with flour. Pour over medallions and serve with
cooked rice. |
