Cream of Mushroom Meatballs:

Here is a quick easy recipe for one of those busy, chilly winter days.
What you need. What you do.
1 lb of ground round. 1/3 cup bread crumbs. 1/3 cup minced onion. 1 egg. 1/4 tsp thyme. 1/2 tsp salt. 1/4 tsp black pepper. Combine meat, crumbs, onion, egg, thyme, salt and pepper in a mixing bowl. Form into 1 & 1/2 inch balls.
3 tbsp corn oil. Heat oil on high in a 12 inch iron skillet. Add meat balls to sear on all sides. Reduce
heat.
1 can condensed cream of mushroom soup. 1 cup water. Add soup and water. Simmer for 1 hour. Stir and baste meat occasionally. Serve hot.
For serving, the sauce may be spooned over the meat and over rice or mashed potatoes.
