Onion Soup:

Here is an easy recipe for a delicious soup.
What you need. What you do.
5 cups of thinly sliced onions. 3 Tbsp. butter. 1 Tbsp. all purpose flour. Fry the onions with butter in a covered skillet, on medium heat until brown. Sprinkle on the flour and cook on low heat until golden.
6 cups of beef stock. Add stock. Bring to boil. Simmer and stir 20 minutes, uncovered.
Preheat oven to 350 .
2 crusts of dried french or white polish bread. 1/4 Lb. grated Swiss or Mozzarella cheese. Put soup into serving crocks with bread on top. Sprinkle cheese on top of each. .Bake at 350 to melt the cheese. Serve hot.
We have always loved onion soup, sometimes called French onion soup, and we used to order it in restaurants at every opportunity. That gave us a large number of disappointments as we discovered that many restaurants do not do a bang up job. Therefore, we were happily surprised when I tried it at home and discovered it was not all that difficult to make. Now, when we have onion soup, it's at home. In restaurants we order something we know they can make, like bean soup.
Here is a tip which will appeal to some folks and, probably, make some folks nauseous.
For a different taste, try mixing your favorite beer or ale, half and half, with tomato juice. Then add a dash of tabasco.
