Here is a recipe right from the Michigan UP. It was
developed by a real Yupper, so it is authentic. |

What you need. |
What you do. |

Remove fat and bone from 1 lb. of round steak. Cut into 1/2 inch
cubes. Prepare 1/3 lb. of pork steak in the same way. Mince 1/4
cup onion. Dice 5 cups of raw potato. Dice 1/3 cup of turnup.
1 tsp. salt. 1/4 tsp. black pepper.. |
Put meat, onion, potato, turnup salt and pepper in a large mixing
bowl. Mix thoroughly. |

1 & 1/4 cups shortening. 1 cup boiling water. 3 cups unsifted
flour. 1 tsp. salt. |
Place shortening in bowl and pour water over it. stir until shortening
is melted. Add salt and flour and mix until dough is smooth. |

Separate dough into 9 equal balls and roll each out on a floured
board into an 8 or 9 inch circle. |

Preheat oven to 350 deg. |
|
Place 1 cup of filling on each circle. Fold one side over to
the opposite edge and pinch the edges together to seal. Cut 2
short slashes in the top of each. |

Place the pasties on cookie sheets and bake at 350 deg. for 1
& 1/2 hours. |
|
Serve hot with catsup. |

Leftovers may be frozen and reheated. |
|
The secret to great pasties is in the crust. Although it is simple,
you must be sure to follow the instructions exactly. It's worth
the effort. |
