Split Pea Soup:

Here is a soup for those damp chilly days when you need something hot, filling, and good. To be its best, it must simmer all day.
What you need. What you do.
1 meaty ham hock. 3 qts. water. 3 cups, or more, of chopped cooking onions. 3 tsp. salt. 1 tsp black pepper. Place hock, water, onion, salt, and pepper in an 8 or 10 qt. pot. Simmer for 2 or 3 hours.
Remove ham hock from pot. Strip out the meat and return it to the pot. Discard the bone, fat, and skin.
4 cups dried split green and/or yellow peas. 1 cup chopped celery with leaves. 1 cup thin sliced carrot. 1 thin sliced leek. Add peas, celery, carrot and leek. Continue to simmer for about 3 hours, until the peas are fully cooked and smooth. Add water as needed.
Adjust seasoning.
Serve hot with sour cream, black bread, and butter.
This is a large batch but it freezes well for those busy days.
