Pepper Steak:

We are normally busy people and we like quick recipes. We also like delicious food. This pepper steak meets both requirements.
What you need. What you do.
1/2 cup flour. 1/2 tsp. salt. 1/4 tsp. black pepper. Add salt and pepper to flour and sift onto plate.
Remove bone and fat from 1 lb. of round steak and cut it into 1/8 inch slices. Dredge meat in flour mixture, coating all sides.
2 tbsp. corn oil. 1 cup beef stock. 1
cup chopped yellow onion. 1/4 tsp. thyme.
Heat oil in a 12 inch iron skillet. Add meat to brown on both sides. Add stock, onion, and thyme. Simmer until meat is tender.
Seed and cut 1 green pepper into 1 inch squares. Slice 1 cup fresh mushrooms. Add pepper and mushrooms. Simmer about 10 minutes. Do not over cook pepper.
Serve over hot cooked brown rice.
