Pepper Steak:

We are normally busy people and we like quick recipes. We also
like delicious food. This pepper steak meets both requirements. |

1/2 cup flour. 1/2 tsp. salt. 1/4 tsp. black pepper. |
Add salt and pepper to flour and sift onto plate. |

Remove bone and fat from 1 lb. of round steak and cut it into
1/8 inch slices. |
Dredge meat in flour mixture, coating all sides. |
2 tbsp. corn oil. 1 cup beef stock. 1
cup chopped yellow onion. 1/4 tsp. thyme. |
Heat oil in a 12 inch iron skillet. Add meat to brown on both
sides. Add stock, onion, and thyme. Simmer until meat is tender. |

Seed and cut 1 green pepper into 1 inch squares. Slice 1 cup
fresh mushrooms. |
Add pepper and mushrooms. Simmer about 10 minutes. Do not over
cook pepper. |
|
Serve over hot cooked brown rice. |
