Williams Pizza:

Here is a recipe which is definitely not low fat, but it tastes great. We used to go out for pizza, until we developed this recipe. Now, we order something else when we go out. The pizza peddlers cannot make it this good.
What you need. What you do.
6 oz tomato paste. 2 tsp oregano. 1/2 tsp basil. Dash of redhot sauce. Mix tomato paste, oregano, basil and hot sauce in a small bowl and set aside to steep.
1 pkt dry yeast. 1 tsp sugar. 1/4 cup luke warm water. Mix yeast, sugar and water in a cup and set in warm place.
2 cups all purpose flour. 1/2 tsp salt. 3/4 cup luke warm water. Sift flour with salt into large bowl. Make a well in the flour. When yeast begins to foam, add yeast mixture and water to bowl. Mix all ingredients into a ball. Turn out on floured board and knead until smooth and elastic. Dust dough with flour and return to bowl. Cover with a cloth and place in warm place to rise. The oven door with the oven on very low works well.
When dough has doubled (about 1 hour), return to board and kneed about 30 times. Return to bowl and allow to rise again.
2 drops olive oil. Lightly oil a 14 inch pizza pan.
When dough is doubled, return to board and roll out to 16 inch circle. Place on pizza pan and crimp up edges. Make 3 or 4 knife cuts in dough.
Grate 1 lb mozzarella cheese.
A few of the many options are:
Thin sliced pepperoni, chopped green pepper, chopped onion, sliced mushrooms, sliced olives, sausage, and a few etceteras.
Spread tomato paste mixture on dough. Spread cheese on top. Spread optional ingredients on top.
Bake at 400 deg for 25 minutes. Cut and serve hot.
Note::: Experience has shown that a counter-top mixer with a dough hook can save much effort in this process. The dough can be cleared from the hook and left right in the mixer bowl to rise. The cloth cover is still important to keep out drafts, etcetera.
Here is a tip for tomato paste.
Instead of dipping the paste out of the can, open both ends. Remove one lid and hold the lid, free end downward, over your bowl. The paste will slide out of the can, cleaning the sides as it goes. You won't have to scrape it out. You may have to give a slight shake to get the paste moving. The remaining lid can be lifted off of the paste before it tips over.
