Pork Kebabs:

Here is a delicious way to grill pork.
What you need. What you do.
1 cup dry white wine. 2 tbsp. brown sugar. 2 tsp. chopped garlic. 1 tbsp. grated fresh gingerroot. 2 tsp. Chinese hot mustard. 1 tsp. salt. 1/2 tsp. ground black pepper. Combine all ingredients in a small mixing bowl.
Pork chop or loin. Allow 1/2 lb. per serving. Cut pork into 1&1/2 inch cubes. Place in a suitable container and cover with marinade. Cover and refrigerate for 12 to 20 hours.
Grill and charcoal. Build a fire in the grill using charcoal. Your goal is to have a 1 layer bed of briquets with a coating of grey ash over them.
Small onions, whole mushrooms, red bell pepper, zucchini, small tomatoes, and/or other selected vegetables cut to size. Canned Pineapple chunks. Bamboo or steel skewers. Alternate pork pieces and onions on skewers. Vegetables cook more quickly than meat and onions, so we put other vegetables and pineapple on separate skewers.
When fire is ready, place skewered meat on the grill. Grill for 7 minutes and turn. Place skewered vegetables on grill. Baste with marinade. Grill for 4 minutes and turn. Baste and grill for 4 minutes more. Serve all.
Note: The grilling time will depend on the temperature of your fire. It could be more of less than indicated.
