Roast Pork with Dressing:

Here is a great meal for a chill winter day.
What you need. What you do.
Preheat oven to 325 deg.
A 3 or 4 lb. loin end pork roast. Ground black pepper. Salt. 1/2 cup dry white wine. 1 cup water. 2 tbsp. orange juice. Rub the roast with salt and pepper. Place in a small roasting pan. Add wine water and orange juice to pan. Cover pan and roast at 325 deg. for 1 hour.
4 cups dry bread broken into pieces. 1/2 cup dry white wine. 1/2 cup water. 1/2 cup chopped onion. 1 cup chopped celery. 1/4 cup chopped red bell pepper.1/4 cup chopped tart apple. 1 tbsp. parsley. 1/2 tsp. sage. 1/2 tsp. thyme. 1/4 tsp. rosemary. 1&1/2 tsp. salt. 1/2 tsp. ground black pepper. Place bread in a large mixing bowl. Add the wine and water and mix. Add the remaining ingredients and mix thoroughly.
Remove 1&1/2 cups broth from the roasting pan. Add half of the broth to the dressing and mix well. Reserve the remaining broth.
Pack the dressing around the roast. Cover and continue roasting for 2 hours.
1 cup water. Granulated flour. When roast is done, remove it and the dressing to a warm platter. Place the roasting pan on a burner and add the water and remaining broth. Bring to boil and scrape up residue. Thicken with granulated flour. Pour into gravy boat and serve all with mashed potatoes and choice of cooked vegetable.
