Darn Good Potatoes

Here is a simple but great change of pace recipe for that old staple standby potato. This dish can be served with any meat entrée. It goes particularly well with any holiday meat like ham or turkey. This recipe is enough to serve four to six people. It is a simple thing to half or double the batch.

What you need. What you do.
Preheat oven to 350 deg.
4 lbs. potatoes peeled and sliced into 1/4" slices. 1 medium cooking onion peeled and sliced thin. 1 or 2 envelopes onion soup mix. Bacon bits. Butter. Salt. Ground black pepper. In an 8 X 12 baking dish place one layer of sliced potatoes. Dot with butter and add one layer of sliced onion. Sprinkle with onion soup mix and bacon bits to taste. Sprinkle on salt and pepper to taste. Repeat for two more layers.
Cover dish with foil and bake at 350 deg. until potatoes are tender ( about 1 hour).
Grated sharp cheddar cheese. Remove foil and sprinkle with cheese.
Return uncovered to oven and broil for a few minutes to melt cheese.
Serve immediately.
