German Potato Salad:

Here is a hot dish which will warm you up and stick to your ribs
in those chilly days. |

What you need. |
What you do. |
|
6 medium potatoes. 2 tsp. salt. water. |
Place potatoes in a saucepan with the salt. Cover with water.
Bring to boil and continue to boil until done. Allow to cool. |

6 large eggs. 1 qt cold water. |
Place eggs and water in a sauce pan. Cover and bring to boil.
Boil 1 minute. Remove from heat and leave covered while cooling. |

Peel and dice eggs and potatoes. |
|
1/3 lb. diced bacon. 1 tbsp. flour. 2 tbsp. dry mustard. 1/2
cup water.1/2 cup cider vinegar. |
In a large skillet, fry the bacon until crisp. Spoon off all
but 1 tbsp. of the fat. Gradually stir in the flour and the mustard.
Mix the vinegar with the water and add slowly stirring constantly. |

2 tsp. salt. 1 tsp. ground black pepper.1 large onion chopped. |
Add the salt and pepper. Add the eggs, potatoes and the onion.
Stir to mix. Cover and keep on low heat until ingredients are
hot. |

Keep hot until ready to serve. |

This hot salad goes great with broiled or grilled Bratwurst. |
