German Potato Salad:

Here is a hot dish which will warm you up and stick to your ribs in those chilly days.
What you need. What you do.
6 medium potatoes. 2 tsp. salt. water. Place potatoes in a saucepan with the salt. Cover with water. Bring to boil and continue to boil until done. Allow to cool.
6 large eggs. 1 qt cold water. Place eggs and water in a sauce pan. Cover and bring to boil. Boil 1 minute. Remove from heat and leave covered while cooling.
Peel and dice eggs and potatoes.
1/3 lb. diced bacon. 1 tbsp. flour. 2 tbsp. dry mustard. 1/2 cup water.1/2 cup cider vinegar. In a large skillet, fry the bacon until crisp. Spoon off all but 1 tbsp. of the fat. Gradually stir in the flour and the mustard. Mix the vinegar with the water and add slowly stirring constantly.
2 tsp. salt. 1 tsp. ground black pepper.1 large onion chopped. Add the salt and pepper. Add the eggs, potatoes and the onion. Stir to mix. Cover and keep on low heat until ingredients are hot.
Keep hot until ready to serve.
This hot salad goes great with broiled or grilled Bratwurst.
