Here is a great snack which can be made the day before and served
cold with your other snacks. |

What you need. |

6 oz tomato paste. 2 tsp. oregano. 1/2 tsp basil. Dash of redhot
sauce. |
Mix tomato paste, oregano, basil and hot sauce in a small bowl
and set aside to steep. |

2 tsps. dry yeast. 1 tsp. sugar. 1/4 cup lukewarm water. |
Mix yeast, sugar and water in a cup and set in warm place. |

2 cups baker's flour. 1/2 tsp. salt. 3/4 cups lukewarm water. |
Place flour and salt in a counter top mixer with a dough hook.
Pour in yeast mix and add warm water. Mix all ingredients into
a slightly sticky ball. Add warm water or flour by the teaspoon
to get the right consistency. Lift hook and scrape dough back
into bowl. Cover the bowl with a cloth and allow to rise. |

When dough has doubled (about 1 hour), kneed dough with the hook
again. Cover and allow to rise again. |

1 cup shredded mozzarella cheese. 1 cup shredded sharp cheddar
cheese. 1 cup thin sliced pepperoni. |
When dough is doubled, punch it down and roll it out on a floured
board into a thin 12 X 20 inch rectangle. Spread tomato paste
mixture on dough. Spread cheese on top. Spread pepperoni on top.
Roll dough into a roll from the long side like a jelly roll.
Seal edges with a bit of water. |

Olive oil. |
Lightly oil a cookie sheet. Place roll on the sheet. Curve to
fit if necessary. Cover and allow to rise about 30 minutes. |

Preheat oven to 400 deg. |
|
Bake roll at 400 deg for 25 minutes. Remove from oven and allow
to cool. |
|
When ready to serve cut roll into 1 inch slices and arrange on
a serving tray. |
