Here is a quick and easy Cajun style recipe. |

What you need. |
What you do. |

2 tbsp. peanut oil. 1 cup chopped onion. 1 cup chopped celery. |
In a wok or skillet, saute the onions and celery until al dente,
about 15 minutes |

1 seeded and chopped green bell pepper. 1/2 seeded and chopped
red bell pepper. |
Add the red and green pepper and saute for 10 minutes. |

Peel and cut in 1 inch pieces, 4 cups ripe tomatoes, (or 1 qt.
canned tomatoes). 1& 1/2 tsp. salt. 1 tbsp. brown sugar.
2 tbsp. cider vinegar. 1/2 tsp. ground cayenne pepper. |
Add tomatoes, salt, vinegar, brown sugar and cayenne pepper.
Simmer for 10 minutes. |

2 lbs. medium shrimp, peeled and deveined. |
Add shrimp. Cover and simmer until shrimp is tender. |
|
Serve with cooked white or brown rice. |
