Tournedos de Boeuf

What you need. What you do.
1/4 cup extra virgin olive oil. 1/4 cup dry red wine. 1/4 tsp. each of oregano, thyme, basil, rosemary, fresh ground black pepper, and crushed garlic. Mix all ingredients and allow to stand for 1/2 hour.
4 filets of beef of about 8 oz. each. Place fillets in a shallow bowl and pour marinade over them. Cover with plastic wrap and refrigerate for 4 or more hours. Turn several times.
Preheat oven to 400 deg.
1 tbsp. butter or margarine. 1/4 cup minced onion. In a small sauce pan fry onion in butter to caramelize.
.2 cups beef stock. 1/4 cup fine chopped mushrooms. 1 tbsp. brown sugar. 1 tbsp. lemon juice. 1/4 tsp. thyme. 1/4 tsp salt. 1/2 tsp ground black pepper. 1 crushed bay leaf. Add all ingredients and simmer until bubbling.
1/2 cup good dry red wine. Add wine and simmer until hot.
Granulated flour. Thicken sauce with flour.
Place 1 or more tbsp. of marinade in a hot frying pan. Quickly sear filets on both sides. Salt lightly. Cover frying pan and move to oven.
Bake filets for 8 minutes.
Remove from oven, slice into 3/8 inch slices, and place on serving plates. Spoon on sauce and serve with re-baked potatoes, a choice of vegetables and a bottle of good, dry, red wine.
