One:
6 to 8 small boneless walleye fillets. 1 cup milk. |
Pat fillets dry with paper towels. Place in small bowl and cover
with milk for 5minutes. |

1/2 cup flour. 1 tsp. salt. 1/2 tsp. ground black pepper. |
Sift flour, salt and pepper onto a plate. Shake excess milk off
each fillet and place in flour mix to obtain a light coating
on each side. |

4 to 6 tbsp. corn oil. |
Heat oil in iron skillet to medium heat. Place fillets in skillet
and fry till golden brown. About 5 minutes on each side. |
Two:
6 to 8 small boneless fillets. 2 tbsp. butter. 2 tbsp. lemon
juice. |
Pat fillets dry with paper towels. Rub each fillet with lemon
juice on both sides. Place fillets on aluminum foil sheet and
spread butter on each piece. Place all on broiler pan and broil
until done. about 10 minutes. |
Three:
6 to 8 small boneless fillets. 1/4 cup minced onion. 2 tbsp.
lemon juice. |
Pat fillets dry with paper towels. Stack fillets on aluminum
foil sheet, 2 by 2 with onion between the layers Fold foil up
and pour on lemon juice. Enclose the fillets in the foil and
seal by crimping the edges. Place the resultant package directly
on the coals of a charcoal fire for 8 to 10 minutes. |

For a low fat dinner, serve the number three fillets with rice
cooked in chicken stock. If you don't care about fat, French
fries are great. |
